ADF Enderun executive chef Marc Chalopin recently held a cooking demonstration of dole fillets Sète-style (filet de bar à la Setoise) at Enderun Colleges for the Learn from the Masters class. Chef Chalopin, who was handpicked by Alain Ducasse Formation to maintain in Enderun its philosophy, culinary principles and techniques reminded the participants, "cooking involves all five senses: Sight, smell, taste, touch and hearing." He interested his audience when he demonstrated sous-vide, a relatively new technology in cooking where ingredients are vacuum-packed into plastic bags and then cooked to seal in its moisture and flavor.
Ever the generous host, Chef Marc cooked the menu served to the participants. It covered cappuccino of forest mushroom, crispy salad of garden vegetables with lemon vinaigrette, pan-fried fillet of sea bass on garlic and pesto infused fish bullion, capped with a dessert of traditional Baba soaked in vintage rum. He was third of three speakers in the day’s lecture — first of three distinguished Enderun faculty members as they passed on lessons they have learned from their mentors.
