A taste of elegance at Manila Hotel’s Champagne Room
02/08/2009 In time for Valentine’s Day, Manila Hotel’s lavish Champagne Room introduces its new French-inspired menu cooked to perfection by no less than Manila Hotel’s Executive Chef Konrad Walter. The selections are predominantly French coupled with some Asian and Mediterranean flavors. For starters, enjoy an assortment of French artisan bread such as multigrain, combicorn and mini French baguette with home-made cognac-scented chicken liver mousse. As an appetizer, the Champagne Room prides in its “Napoleon d’ Aubergine et Fromage Blanc,” which is layers of grilled eggplant, Laguna cheese, tomato and sautéed mushroom on bed of crispy lettuce with tomato-basil vinaigrette. Take pleasure with a warm serving of Cream of Scallop soup with vegetable brunoise and fresh herbs, also known as “Soupe de Coquilles Saint-Jacques aux Fines Herbes.” Following the soup is a fusion of French and Asian dish called “Les Tortellini Farci a l’Epinard, Sauce Crème au Saumon Fume,” described as home-made tortellini with spinach, malunggay and ricotta in smoked salmon sauce. For seafood lovers, a must-try for the main course is the Grouper fillet sautéed in olive oil, with goose liver sauce, shrimp risotto and baby French beans, dubbed as “Merou Saute, Sauce au Foi Grass.” For meat lovers, spoil yourselves with the “Magret de Canard, Sauce au Fruits de la Passion et Poivre rose,” which is roast duck breast in passion fruit-pink peppercorn sauce with Thyme wild rice and bouquet of young vegetables. Not to be missed to complete one’s dining experience is a delectable dessert named “Pudding au Chocolate Blanc Tiede, Glace au Nougat,” commonly called light tempered white chocolate pudding served with nougat ice cream. Hailed as Manila Hotel’s main dining room back in 1912, the Champagne Room is known to be “the place to be seen.” Eminent for its excellent cuisine and elegant ambiance, this room embodies the Grand Dame’s decades of fine tradition. To date, it remains to be a favorite venue for elegant gatherings and countless celebrations.
