Discover the way to perk up even everyday meals
05/11/2008 Perhaps one of the most challenging but enviable jobs for a food lover is being able to assist in Heny Sison’s test kitchen, experimenting and testing various recipes that will be served in her soon-to-open Café S. Benedetto. The famous culinary expert scuttles back and forth to two kitchens that she manages, where she also teaches cooking and baking classes — one in Boni Serrano in Quezon City and the other in Walter Mart in Pasay Road, Makati. Aside from the culinary courses, her Heny Sison School of Cake Decorating & Baking also currently trains Hotel and Restaurant Management teachers from Northern Philippines (sponsored by the local government), and is involved in training a convent in Bohol to operate a coffee/bakeshop. When making healthy-delicious food choices, Heny Sison said she gets help from Glad wraps and bags, particularly Glad Cook ‘n’ Bake, which can be used for baking and other cooking methods like frying, steaming, boiling and grilling. To help readers rediscover joy in their everyday cooking, Heny shares the following recipe — with some help from Glad Cook ‘n’ Bake — that can be enjoyed in the home even when there’s no special occasion: Maya-Maya with Galangal and Leeks Marinade: 1 stalk leeks 3 tablespoons wansuy leaves 1 teaspoon finely grated galangal 2 tablespoons limejuice 1/2 tablespoon sesame oil 1 teaspoon patis 1.8 - two kilos maya-maya rock salt black pepper 1 piece lime, sliced diagonally 4 stalks leeks 1 cup wansuy leaves 1 tablespoon finely grated galangal Glad Cook ‘n’ Bake Procedure: • To make the marinade, finely slice the green part of the leeks and the wansuy leaves. Mix and add the galangal, lime juice and sesame oil. • Make sure the fish is fully scaled and washed. Pat dry using paper towels. Make diagonal cuts, one inch apart in one direction, then the opposite direction to make a diamond pattern. Season fish with rock salt and black pepper. • Put the lime slices, leeks and galangal inside the cavity of the fish. • Cut a piece of Glad Cook ‘n’ Bake, making sure it is large enough to wrap around the fish and to totally enclose it. Fold it around the fish and seal the edges tightly. • Preheat a griller. Put the fish in the middle of the grill and cook it for 10 minutes. Using a large metal spatula, turn the fish so that it will brown evenly on both sides and cook for another 10 minutes. • Once fish is cooked, open the Glad Cook ‘n’ Bake and slide it into a plate lined with banana leaf. Pour the cooking juices over the fish. Drizzle the dressing over the top and serve straight away.  Back to top
